Almond Roca

Pure Rich Decadence

1 cup   butter
1.25 cups   sugar
1 tbsp   corn syrup
0.25 cup   water
1.5 cups   sliced almonds
0.5 cup   chocolate chips
1. Grease an 8x8 square pan. Melt butter in a heavey saucepan and add sugar. Stir until mixed. Add corn syrup and water and stir constantly and gently until mixture starts to boil.

2. Cook without stirring until temperature reaches 300F; the hard crack stage when syrup dropped in ice water forms hard, brittle threads. Syrup will darken but ensure it doesn't burn by swirling gently. Remove from heat and add almonds. Stir to blend.

3. Turn the mixture into greased pan. Smooth out. Sprinkle chocolate chips over and spread as they melt. You could also use Smarties, M&Ms or Riece's Pieces in place of the chocolate chips. Let cool for 5 to 10 minutes. Score into serving pieces and refrigerate.

My favourite of the Christmas treats and so much better than that stuff you get from a can.
