Alsatian Apple Tart

1. Roll out the pie pastry and place in a shallow pie dish. Cover with foil and fill with rice or beans. Bake at 425 F for 30 minutes. 2. Peel and cut apples and toss them in lemon juice, brown sugar, cinnamon, and nutmeg. 3. Arrange apples in pie shell, and pour custard over top (it should be almost full of custard with the apples just slightly poking out on the top). 4. Bake at 375 F for an hour and 10 minutes, or until apples are tender and the custard is browning.
