Amanda's Perfect Mini Cherry Cheese Cakes

Light, fluffy and delightful

0.5 cup 125 ml   Sugar
0.5 tsp 2 ml   Vanilla
2 pkgs   Cream Cheese (Block variety)
2   Eggs
1 box   Nilla wafers
1 can   Whole Cherries

1. Beat sugar, vanilla, cream cheese, and eggs together until smooth. Line muffin tins with metal cupcake wrappers. Place a Nilla wafer into the bottom of each cup flat side up. Top the Nilla wafer with a dollop of cream cheese filling, leaving about 3/4 of an inch of space at the top of the muffin wrapper.

2. Bake at 325 *F for 25mins. Check after 20 minutes - when they are turning brown or cracking slightly on the surface, they are done.

3. When cooled, top with cherries. 3 cherries on each mini cheese cake with a little bit of the "sauce" that they come in seems to work perfectly.
