Apple-cake Pancake Bake

1. Peel and core apples. Cut into thin slices and saute with the butter in a large oven proof skillet (cast-iron, or stainless steel) over medium heat. Saute until the apples are softening, and getting aromatic.
2. Preheat the oven to 400*F. Sift the flour and salt into a mixing bowl, whisk in the eggs, vanilla and the milk, and stir. Do not over mix, a lumpy batter is desirable here.
3. Pour the batter ontop of the apples in the skillet. Bake in the 400* oven for ten minutes, reduce the heat to 350*F, and cook for a further ten minutes.
4. Mix the icing sugar and the cinnamon together, and when the apple pancake is out of the oven and cooling, sprinkle over top with a sieve.
5. Cut into pie-like squares and serve. It's probably going to be a bit messy getting out of the pan; messy but delicious.
