Apple Caramel Muffins

Ingredients
2 cups 500 ml   flour
1 tbsp 15 ml   baking powder
1 tsp 5 ml   cinnamon
0.5 tsp 2 ml   salt
0.25 cup 50 ml   sugar
2 2   eggs, beaten
0.5 cup 125 ml   milk
3 tsp 45 ml   oil
1 cup 250 ml   apples, peelel, diced
0.25 cup 50 ml   butter
0.5 cup 125 ml   brown sugar
2 tbsp 30 ml   milk
1 cup 250 ml   icing sugar
1 tsp 5 ml   vanilla
0.25 cup 50 ml   pecans, chopped
 
1. Preheat oven to 400*F/200*C. Grease muffin tin. Mix flour, baking powder, salt, cinnamon, sugar together. Add eggs, milk and oil. Stir just to mix.

2. Fold in apples and fill muffin tins. Prepare topping. Melt butter and brown sugar together, stir in milk and icing sugar until smooth. Add vanilla and pecans.

3. Spoon topping over muffins. Bake for about 25 minutes, until firm.
