Apricot Polenta Cake

Honeyed Heaven

1 cup 250 ml   Flour
1 cup 250 ml   Brown Sugar
0.75 cup 190 ml   Cornmeal
1 tsp 5 ml   Baking Soda
0.5 tsp 2 ml   Salt
0.5 cup 125 ml   Butter or Margerine
0.75 cup 190 ml   Milk
1 tsp 5 ml   Vanilla
2   Eggs
1 cup 250 ml   Apricots, pitted and chopped

1. Mix together the flour, cornmeal, sugar, baking soda and salt in a large mixing bowl with a wooden spoon. Meanwhile, beat softened butter together with the eggs, vanilla and milk.

2. Preheat the oven to 350*F and grease a 8 or 9 inch circular pan. Gradually stir the wet mixture into the dry mix, and stir together until all combined. Lightly fold in the diced apricots. Spoon batter into the greased pan and bake for 35 minutes, or until the cake is a deep golden brown and is pulling away from the cake tin edges. Serve with a dollop of vanilla ice cream or custard.
