Asparagus with Feta and Gremolata




Ingredients
1 bunch   asparagus
0.5 cup   parsley, chopped
2 cloves   garlic, minced
1   lemon, zested and juiced
0.5 cup   feta, crumbled
1 tbsp   balsamic vinegar
1 tbsp   olive oil
  salt and pepper
 
1. Mix together the parsley, garlic and lemon zest and juice to make the gremolata. Preheat the oven to about 350°C. Arrange the asparagus on a baking sheet with enough oil to prevent sticking. Sprinkle the asparagus with the vinegar, feta and salt and pepper and bake for 5 to 10 minutes or until the feta has just started to melt. Sprinkle the gremolata over the asparagus and bake another 5 minutes, longer if you prefer your asparagus a little more well done.

2. This is a fabulous side dish but one that requires watching as asparagus can become mushy and inedible with too much cooking.
