Asparagus with Feta and Gremolata

1 bunch   asparagus
0.5 cup   parsley, chopped
2 cloves   garlic, minced
1   lemon, zested and juiced
0.5 cup   feta, crumbled
1 tbsp   balsamic vinegar
1 tbsp   olive oil
  salt and pepper
1. Mix together the parsley, garlic and lemon zest and juice to make the gremolata. Preheat the oven to about 350C. Arrange the asparagus on a baking sheet with enough oil to prevent sticking. Sprinkle the asparagus with the vinegar, feta and salt and pepper and bake for 5 to 10 minutes or until the feta has just started to melt. Sprinkle the gremolata over the asparagus and bake another 5 minutes, longer if you prefer your asparagus a little more well done.

2. This is a fabulous side dish but one that requires watching as asparagus can become mushy and inedible with too much cooking.
