1. Preheat oven to 350 F, and grease a loaf pan.
2. Measure and sift the flour, baking soda, baking powder, sugar and salt into a large mixing bowl. Stir until its all combined.
3. Peel and mash the bananas until they're in a smooth, but still chunky paste. Whisk in the egg, oil, milk and orange peel, and stir until smooth.
4. Gradually mix the wet mixture into dry mixture one cupful at a time, until its all incorporated--beat well.
5. Pour the dough into a loaf pan, or two depending on the pan size, and bake for 50 minutes.
Moist. A comforting staple.
