Bean Salad

Cooler than you are.

0.5 cup 125 ml   Kidney Beans
0.5 cup 125 ml   Black beans
0.5 cup 125 ml   Garbanzo Beans
0.5 cup 125 ml   Romano beans
1   Green Pepper
0.5   Red Onion
2   Tomatoes
2 tbsp 30 ml   Balsamic Vinegar
1 tbsp 15 ml   Olive oil
1 tsp 5 ml   Fresh Basil/Rosemary/Cilantro or Parsley
3   Garlic Cloves
0.25 cup 80 ml   Feta Cheese

1. Rinse and drain beans and place in large bowl.

2. Chop the peppers, onion and tomatoes into small pieces and mix in with beans.

3. Mix together vinegar, olive oil, herbs, and garlic. Add it to the salad and toss well.

4. Top with feta cheese.

5. Ultimately, this as a glorification of left-overs, cleaning out the fridge, or a delicious snack. There are so many possibly ingredients it is hard to list what would be good in here. Chopped sundried tomatoes, zucchini, chorizo sausage, grated carrot, mint, broccoli... the list goes on.
