Bean Salad

1. Rinse and drain beans and place in large bowl. 2. Chop the peppers, onion and tomatoes into small pieces and mix in with beans. 3. Mix together vinegar, olive oil, herbs, and garlic. Add it to the salad and toss well. 4. Top with feta cheese. 5. Ultimately, this as a glorification of left-overs, cleaning out the fridge, or a delicious snack. There are so many possibly ingredients it is hard to list what would be good in here. Chopped sundried tomatoes, zucchini, chorizo sausage, grated carrot, mint, broccoli... the list goes on.
