Black Bottomed Cupcakes

8 oz 250 ml   Cream Cheese
1   Egg
0.3 cup 90 ml   Sugar
1 cup 250 ml   Chocolate Chips
1.5 cup 375 ml   Flour
1 cup 250 ml   Sugar
0.25 cup 60 ml   Cocoa Powder
1 tsp 5 ml   Baking Soda
0.5 tsp 2 ml   Salt
1 cup 250 ml   Water
0.3 cup 90 ml   Vegetable Oil
1 tbsp 15 ml   White Vinegar
1 tsp 5 ml   Vanilla
1. Combine the cream cheese, egg, and sugar together with egg beaters, then stir in the chocolate chips. Set this filling aside.

2. Sift the flour, sugar, cocoa powder, baking soda and salt together into a large mixing bowl. Mix in the water, oil, vinegar and vanilla slowly with egg beaters. Continue beating until the mixture is smooth and glossy.

3. Preheat the oven to 350*F, and line 24 muffin tins with cupcake liners. Pour the chocolate cupcake base into each cup, so as they're one third full. Next spoon in a small dollop of the cream cheese filling.

4. Bake for 30 to 35 minutes.
