Blackberry Buckle

I think nothing finer...

0.5 cup 125 ml   Sugar
0.3 cup 160 ml   Butter
1   Egg
1 tsp 5 ml   Vanilla
1 cup 250 ml   Flour
1 tsp 5 ml   Baking Powder
0.3 cup 90 ml   Milk
3 cups 750 ml   Blackberries
0.3 cup 90 ml   Brown Sugar
0.25 cup 60 ml   Flour
0.5 cup 125 ml   Oats
2 tbsp 30 ml   Butter

1. For the cake-like pudding: Cream together the sugar, butter, egg, and vanilla. Beat together until smooth. Gradually beat in the flour and baking powder. Once the mixture is smooth and elastic, spead on the bottom of a 9 inch round baking tin.

2. Spread the blackberries evenly over the cakey pudding layer, and press in slightly with your hand.

3. Mix together the sugar, oats and flour, and mix in the butter with a pastry blender. Spread this crunchy topping over the blackberries. Bake in a 350*F oven for 50 minutes. This dessert is absolutely perfect with vanilla ice cream or whipping cream.
