Broccoli Quiche


2 cups 500 ml   Chopped Broccoli
0.5 cup 125 ml   Grated Parmesan cheese
2   Garlic Cloves
1 cup 250 ml   Grated Swiss Cheese (Emmenthal or Gruyere...)
0.5 cup 125 ml   Chopped Onion
3   Eggs
0.75 cup 190 ml   Vegetable broth
0.5 cup 125 ml   Milk
1 tsp 5 ml   Salt and Pepper (each)
  Pie Pastry for single crusted pie

1. Line pie plate with pastry, prick the bottom and bake at 450 F for 5 minutes. Quickly boil Broccoli until bright green, and set aside and allow to cool. Finely chop onion, and mince the garlic. Saute in a frying pan with a little butter, until the onion is fragrant and translucent.

2. Remove crust from oven and sprinkle with the parmesan. Layer with half the cooked broccoli, and onion. On top of the broccoli layer with half the cheese, add the remaining broccoli and onion, and cover with the remaining cheese.

3. Beat the eggs and add the cooled broth, salt, pepper and milk. Mix well and pour into the pie dish.

4. Bake at 450 for the first ten minutes, then reduce the heat to 350 F and bake for another 30 minutes.
