Caramel Corn

0.5 cup   popping corn
1 cup   brown sugar
0.25 cup   corn syrup
0.5 tsp   baking soda
0.5 cup   butter
1 tsp   vanilla
1 tsp   salt
2 cups   assortment of nuts
1. Pop corn. Boil sugar, butter, corn syrup and salt for 5 minutes or until mixture reaches the simple syrup state (230F) when soft threads form in ice water. Remove from heat.

2. Add vanilla, stir. Add baking soda and stir in popped corn. Add nut assortment. Stir until well coated. Pour into a greased 13x9" dish and bake in a 250F oven for one hour. Stir every 15 minutes.

A great snack to munch on in front of the fire.
