Caramelized Onion Dip

Sensationally easy

2 tsp 10 ml   Extra Virgin Olive Oil
1.5 cup 375 ml   roughly chopped Onion
2 tsp 10 ml   Flat leaf Parsley
1 cup 250 ml   Plain Yogurt
1. Chop the onion into thin julienned style strips. Heat a frying pan over medium heat, add the olive oil and stir in the onion slices.

2. Stir the onions occasionally. After about 5 minutes, they will begin to caramelize (they'll soften and turn golden brown). Stir constantly for another 5 minutes then remove from the heat.

3. Allow the onions to cool, then add the onions, yogurt and roughly chopping parsley into a food processor. Pulse until smooth. Chill before serving.
