Carrot and Potato Latkes

2 large   Potatoes, peeled
1 large   Carrot, peeled
6   Green Onions
2 tbsp 30 ml   Flat Leaf Parsley
2   Eggs
2 tbsp 30 ml   Flour
1 tsp 5 ml   Cumin

1. Peel and grate both the carrot and the potatoes. Finely dice the green onions and chop the parsley. Combine the potato, carrot, green onion and parsley together in a medium mixing bowl.

2. Stir in the eggs, flour and cumin and mix together until the egg is fully beaten and the ingredients are all combined.

3. Heat a tablespoon of oil in a frying pan over medium heat. Spoon 2 tablespoons of mixture onto the pan, and cook the latkes for about 5 minutes per side until golden brown and tender. Continue with the remaining 'batter', making about 8-10 latkes. Serve with apple chutney.
