Cauliflower Gratin

1. Clean the cauliflower and break into florets. Steam the cauliflower for 5 minutes, drain and set aside. 2. In a small saucepan, melt the butter over medium heat. Stir in the proscuitto, and saute for 4-5 minutes. Stir in the flour, and stir until combined, then add in the milk and cream. Add the cayenne and pepper and bring to a boil. Let the mixture simmer and stir in half of the cheese. 3. Heat the oven to 350*F. Place the cauliflower in a medium casserole dish. Pour in the cheese sauce and stir to combine. Top the gratin with the remaining cheese and dust with the breadcrumbs. Bake for 30 minutes.
