Cheddar Apple Pie

A Homey Showstopper

4 lb   cooking apples, peeled, cored, roughly chopped
6 tbsp   butter
1 tsp   cloves
1 tsp   nutmeg
2 tsp   cinnamon
2   eggs, beaten
1 tsp   vanilla
0.5 cup   sugar

1. Preheat oven to 400F. Fry half the apples in half the butter until they become soft. Add cloves, nutmeg and cinnamon. Tip apple mixture into a food processor or blender and puree gently. Add about 3/4s or the beaten egg and all the sugar and gently mix.

2. Fry the rest of the apples in the rest of the butter. Cook for about 10 minutes.

3. Place original apple mixture into pie pastry and cover with second apple mixture. Bake for 45 minutes. Dust pie with cinnamon sugar upon emergence from oven. Let set and serve with ice cream or whipped cream.
