Cheddar Pastry

4 tbsp   shortening
4 tbsp   cold butter
1.75   all purpose flour
2 tsp   baking powder
0.25 cup   Cheddar cheese, grated
1   egg
1 pinch   salt
  ice water
1. Assemble the pastry in a food processor or use a pastry cutter or two knives. Cut the butter and shortening into the flour until it looks like crumbs. Add the cheese. Add egg, ice water and salt to bind. Turn the pastry out and press it into two discs with one slightly smaller. Wrap each in plastic wrap and chill in fridge for 20 minutes.

2. Preheat oven to 400 F. Roll out larger disc of pastry between plastic wrap and line a buttered 8" pie pan with it, letting it overhang. Pour in pie mixture.

3. Roll out smaller disc of pastry between plastic wrap to form the top. Lay over pie filling and crimp edges inward. Decorate with leftover pastry if so desired and score the top. Cook for 15 minutes then turn oven down to 350F for a further 30 minutes. Sprinkle with cinnamon sugar when out of the oven.

To use with Cheddar Apple Pie. Odd perhaps, but Cheddar and apples go oh so well together.
