Chicken in Smoky Bacon and Black Olive Sauce

3   Chicken Breasts
0.3 cup 90 ml   Tomato Paste
4 slices   Bacon, diced
0.5 cup 125 ml   Sundried Moroccan Olives, pitted
1 cup 250 ml   Spinach
1 splash   Red Wine (two-ish tablespoons)
1 dash   Black Pepper

1. Heat a large non-stick skillet over medium heat. Brown chicken breasts on both sides, about 5 minutes a side. Dice the bacon into inch sized pieces and toss into the pan. Allow bacon and chicken to cook for a couple minutes more.

2. Stir in the tomato paste, along with a spash of red wine and a sprinkle of pepper. Toss in the olives and spinach. Cover the dish, and allow to simmer for another 5-7 minutes.

3. Delicious served with polenta cakes, or wild rice.
