Chipotle Mayonnaise

Tangy and versatile

0.5 cup 125 ml   Mayonnaise
1   canned Chipolte, diced
2 tsp 10 ml   Adobo sauce, from Chipolte can
3   Garlic cloves, minced
  Juice from 1/2 a lemon
  Salt and Pepper to taste

1. Chop canned chipolte (or more, depending on how hot you can handle...and these babies are hot!) and mince garlic. In a small bowl, mix mayonnaise, chipolte, adobo sauce, lemon juice, garlic, salt and pepper all together until well blended.
