Chocolate Orange Biscotti

Jazz up morning Coffee

3 cup 750 ml   White Flour
2 tsp 10 ml   Baking powder
0.5 tsp 2 ml   Salt
3 large   Eggs
2 tbsp 30 ml   Vegetable Oil
3 tbsp 45 ml   Orange Zest (zest from 2 oranges)
2 tbsp 30 ml   Orange Juice (juice from 1 orange)
1 cup 250 ml   Chocolate Chips, unsweetened
1 cup 250 ml   Brown Sugar

1. Preheat oven to 350*F. Stir flour, baking powder and salt together. In a separate bowl mix eggs, sugar, orange zest and juice together with egg beaters. Blend until smooth.

2. Add the wet mixture to the flour. Blend together slowly until all encorporated. You may need to get in there and finish blending with your hands...the dough becomes very firm. Wet your hands with cold water and form the dough into two small logs, roughly 3 inches wide by 7-8 inches long.

3. Bake the logs until lightly browned and firm to touch, around 30 minutes. Remove from oven. Allow to cool for 20 minutes. Reduce oven temperature to 300*F

4. Once cooled, cut the logs into slim 1/2 inch slices. Cut log on a diagonal so biscotti is longer in length. Place biscotti slices face down on a parchment lined baking sheet and bake at the lowered temperature for 20 minutes.

5. Cool completely on a baking sheet.
