Chocolate Pistachio Biscotti

Soft and sweet

0.75 cup 90 ml   Butter
2 cups 500 ml   Flour
0.5 cup 125 ml   Cocoa Powder
1 tsp 5 ml   Baking Soda
0.5 tsp 2 ml   Salt
1 cup 250 ml   Brown Sugar
2   Eggs
1 cup 250 ml   Pistachio nuts, shelled
1. Sift together the flour, cocoa powder, baking sodain a large bowl. Meanwhile beat together the sugar, butter and eggs in a bowl with beaters until its light and airy.

2. Gradually beat the wet mixture into the flour until its all smooth and combined. Stir in the pistachios with a wooden spoon.

3. Transfer the dough to a greased baking sheet and form into a rough rectangular log shape, with a flattened top. Bake in a 350 degree oven until its slightly firm, around 25 minutes. Allow the log to cool.

4. Once the biscotti log has cooled slice into thin one inch sized pieces, and replace on the baking sheet. Bake the biscotti slices side down on a baking sheet until they are firm and crisp, around 5-8 minutes.
