Coconut Chocolate Bars


0.5 cup 125 ml   Butter
0.25 cup 60 ml   Sugar
3 tbsp 45 ml   Cocoa Powder
1   Egg
1 tsp 5 ml   Vanilla
2 cups 500 ml   Graham Cracker crumbs
1 cup 250 ml   Coconut Flakes
0.5 cup 125 ml   Walnuts
0.25 cup 60 ml   Butter
2 cups 500 ml   Icing Sugar
2 tbsp 30 ml   Custard Powder
2 tbsp 30 ml   Boiling Water
2 squares   Unsweetened Baker's Chocolate
1 tbsp 15 ml   Butter
1. Place half a cup of butter, a fourth of a cup of sugar and the cocoa powder on top of a double boiler. Stir, with the double boiler on low heat, until the mixture is smooth. Stir in the egg and vanilla. Remove from the heat and stir in the graham wafer crumbs, coconut and chopped walnuts. Spread this mixture onto the bottom of a greased cake pan and place in the fridge to chill.

2. Mix together a fourth of a cup of butter, the icing sugar, custard powder and the boiling water. Stir until this is all combined. Once the mixture is combined, and smooth, spread out over the coconut-graham cracker crust and refrigerate.

3. Melt the baker's chocolate and the remaining tablespoon of butter, and spread over top of cooled bar. Chill, cut and serve.
