Crispy Onion Rings

1. Slice onions lengthwise and separate the rings from each other-set aside. Stir together the whole wheat flour, salt and pepper in a shallow dish. Stir the sparkling water into the flour mixture, and mix until all combined. If it's still very stiff batter, add a splash or two more of sparkling water until the batter is the consistency of a thick pancake batter. 2. Heat a fourth of a cup of oil in the bottom of a large pot over medium low heat. Wait until a droplet of water sizzles in the oil. Dip each onion ring in the batter and cook them in the oil, 3 or 4 rings at a time. Once the ring is crisped up and golden (about 3 minutes), remove them from the pan and set to dry on paper towel. 3. Continue until all the onion rings are fried, then serve with BBQ sauce or a zesty aioli for dipping.
