Curried Lamb Burgers

1 medium   Onion, diced
2 tsp 10 ml   Sea Salt
2 tsp 10 ml   Cracked Black Pepper
1 tbsp 15 ml   Curry Powder
2 tbsp 30 ml   Cilantro, chopped finely
1.5 pounds 675 g   Ground Lamb

1. Finely dice the onion and the cilantro. Combine the lamb, onion, cilantro, salt, pepper and curry powder together in a large bowl. Blend the mixture thoroughly - I find mixing with my hands really gets the job done, and form into 6 medium sized patties.

2. Cook burgers on a heated grill until cooked throughout - about 4-5 minutes a side. Alternately, cook burgers in a 350*F oven, for about 10 minutes a side.

3. Delicious served on warm, toasty buns with mango chutney or relish, butter lettuce and fresh tomatoes.
