Danish Bleu Salad

Ranch Dressing gets a Makeover

1 head   Butter Lettuce
100 grams   Mild Blue Cheese (Danish Blue, Cambazola etc...)
0.5   Red Onion, sliced super fine
1   Avocado
0.5 cup   Pecans
1 tbsp 15 ml   Butter
1 tbsp 15 ml   Brown Sugar
  Ranch Dressing, to taste
1. Heat the butter in a small frying pan over medium-low heat. Once it's melted, stir in the brown sugar and pecans. Stir the pan occasionally as the nuts toast and carmelise. Set aside to cool after about 7 minutes.

2. Wash and tear the lettuce and place in a serving bowl. Finely dice the red onion, and slice the avocado and sprinkle in. Crumble, or dice the blue cheese, and spread over top of the salad. Top with the pecans. Ranch dressing, surprisingly, really works perfectly with this salad.
