Dijon Chicken


4 4   chicken breasts
3 tbsp 45 ml   dijon mustard
2 tbsp 30 ml   olive oil
2 2   green onions, chopped
0.5 cup 125 ml   white wine
1 clove 1 clove   garlic, minced
0.5 cup 125 ml   chicken broth
2 tbsp 30 ml   cream
1 tsp 5 ml   salt
1 tsp 5 ml   black pepper
1. Saute garlic and green onions in olive oil in skillet. Sauce chicken breasts with mustard, then saute in olive oil in skillet over medium-high heat for about 6-7 minutes.

2. Flip breasts, wine and chicken broth. Increase heat to high and bring to a boil. Cover and simmer, reduce heat, about 10 minutes.

3. Remove breasts and set aside. Add cream to pan and bring to a boil, stir until sauce is slightly thick in consistency. Season with salt and pepper, ladle over chicken and serve.
