Double Chocolate Fudge

Double the Delicious

3 cups   sugar
1 cup   milk
3 oz   unsweetened chocolate
2 oz   white chocolate
0.333333 cup   corn syrup
0.5 tsp   salt
5 tbsp   butter
1 tsp   vanilla
1 cup   coarsely chopped nuts
1. In large saucepan over medium heat, combine sugar, milk, chocolate, corn syrup and salt. Bring to a boil, stirring frequently prevent crystallization. Cook without stirring to soft ball stage (238F) when syrup dropped into ice water forms a soft ball that flattens upon removal from water. Remove from heat.

2. Let mixture cool to lukewarm (110F) without stirring. Add butter and vanilla. Using wooden spoon, beat mixture until it thickens and is less shiny. Quickly stir in nuts and pour mixture into buttered 8" square pan.

3. Score into squares while warm cut when cool and firm. These fudge squares can be packaged prettily with cellophane to be given as a gift or of course hoarded to yourself to indulge in pure decadence.

This can double as a Christmas treat and a gift. If you can keep your hands off of it that is.
