Foccacia Bread




Ingredients
1.5 cups 375 ml   Warm Water
1.5 tsp 7 ml   active Yeast
2 tbsp 10 ml   Olive Oil
0.5 tsp 2 ml   Sugar
3 cups 750 ml   All purpose Flour
0.5 tsp 2 ml   Salt
2 sprigs 30 ml   Fresh Rosemary
  Cornmeal
  Sea Salt and Cracked pepper

 
1. Pour warm water into a large bowl, stir in the sugar, and sprinkle the yeast on top. Let sit for 10 or so minutes or until frothy.

2. Stir in the Olive Oil and 2 cups of flour and beat with egg beaters (or Kitchen Aid etc.) until smooth and elastic. Stir in remaining flour until it is smooth but firm.

3. Knead on a floured surface for 8-10 ish minutes until it is smooth and elastic. Place dough in a greased bowl (grease with olive oil), turning the dough in the bowl so it is greased all over. Cover with a tea towel and let rise for 30 mintues.

4. Punch risen dough down, and divide in half. Form each half into a small round and place on a greased baking sheet sprinkled with cornmeal. Cover and let rise again for 30 minutes.

5. Brush tops with Olive oil, and sprinkle liberally with sea salt, cracked pepper, and torn Rosemary. Bake in a 375*F oven for 25-30 minutes.

6. Cut into wedges and serve with Balsamic vinegar.
