Fried Green Zucchini

The lesser known sequel

4   Zucchini, cut into thin slices
0.5 cup 125 ml   Olive Oil
4   Garlic Cloves, minced
0.5 cup 125 ml   Bread Crumbs
1 tsp 5 ml   Cracked Black pepper
1   Egg
1. Mix together garlic, bread crumbs and pepper. Whisk egg with a little water in another shallow dish.

2. Heat Olive Oil in a frying pan over medium heat. Dip Zucchini into egg mixture and then into the bread crumb mixture and place in frying pan.

3. Fry Zucchini slices in batches--fry until crispy and brown on both sides

4. Take Zucchini out of pan and place on paper towel to absorb excess oil.
