Fruit Mojitos

Vive la sultry summer

1 cup 250 ml   Sugar
  Mint leaves, roughly a large handful
3 oz   White Rum
1   Lime, cut into wedges
  Club Soda
0.5 cup 125 ml   Raspberries
1. In a small sauce pan over medium heat, stir sugar into two cups of water. Bring to a boil stirring until the sugar is dissolved.

2. Muddle mint leaves and two lime wedges with a fork (or muddler.) Divide crushed mint and lime between two glasses. Pour an ounce and a half of rum into each class.

3. Add a spoonful of simple sugar syrup to each glass (the recipe above makes more than enough for two drinks. If seconds are not in order, it does keep refridgerated.) Top the glass with Club Soda, and toss in the raspberries.
