Ginger Plum Pork

Zesty Asian inspired

2   Pork Chops
2   Garlic Cloves, minced
2 inch   Ginger piece, minced
0.25 cup 60 ml   Soy Sauce
2 tbsp 30 ml   Red Wine Vinegar
2 tbsp 30 ml   Balsamic Vinegar
2 cup 500 ml   Plums, sliced
2 tbsp 30 ml   Olive Oil
1. Heat oil in a frying pan over medium heat. Fry Pork Chops until brown on each side--roughly 3-4 minutes per side. Remove from pan and set aside.

2. Add minced garlic, ginger to the pan. Add Soy Sauce, red wine vinegar, and Balsamic Vinegar. Stir until liquids have thickened and slightly reduced. Around 4-5 minutes.

3. Add Pork chops to pan, cook covered. Turn chops so liquid reaches all sides. Add sliced plums to pan and cook until they are softened and pork chop is cooked throughout.
