A Standard

8 oz 225 g   chick peas
2 tbsp 60 ml   lemon juice
4 cloves   garlic, minced
5 tbsp 150 g   tahini paste
1 tsp 5 ml   salt
1 tsp 5 ml   black pepper
2 tbsp 30 ml   olive oil

1. Combine garlic, chickpeas, and lemon juice with a mortar and pestle, or in a food processor or blender. Or, if chunky hummus is perferred, with a potato masher.

2. Add tahini paste, salt and pepper. Add olive oil and mix thoroughly. Taste and adjust accordingly if needed.

3. Serve with pita bread. Will keep for a few days in fridge.
