Mashed Baby Potatoes with Chevre

A new, tangy twist

1 Pound   Red or white new potatoes
0.75 cup 190 ml   Soft goats cheese
1 tbsp 15 ml   Butter
1 tsp 5 ml   Both salt and pepper
1 tsp 5 ml   Lemon juice

1. Rinse potatoes and remove any belmishes. Boil potatoes in their skins, for 15 or so minutes-until very tender when pierced with a fork.

2. Drain the spuds. With a fork roughly mash in goats cheese, butter, lemon juice, and seasonings.
