Mushroom Pate

Chic and effortless

4 cups 1000 ml   Mushrooms-use Crimini, Portobello, or a mixture of both
1   small sweet Onion
2 cloves   Garlic
1 tbsp 15 ml   Olive oil
1 tbsp 15 ml   Lemon juice
0.5 cup 125 ml   Cream cheese
0.25 cup 60 ml   Soft Goats cheese
1. Finely chop mushrooms, onion and garlic and fry in olive oil and lemon juice for 5-7 ish minutes, or until they are tender and fragrant.

2. Once the mushroom mixture has cooled, tip into a food processor or blender along with the cream and goat cheese. Blend until velvety smooth.

3. Serve with crostini, bread sticks, or sliced baguette. A great antipasti like appetizer served with other cheeses, meats, vegetables etc...
