Orange Curd and Peach Pudding

The Proof is...

2   Egg Yolks
3   Eggs
0.25 cup 60 ml   Butter
0.75 cup 190 ml   White Sugar
1 cup 250 ml   Orange Juice (or the Juice from 3 oranges)
3   Oranges, zested.
3   Peaches, sliced.
1. Preheat oven to 350 F

2. Melt Butter and sugar in a saucepan until sugar is disolved. Add the Eggs, whisking constantly. Mix in the Orange zest and juice and bring to a boil.

3. Slice the peaches into small wedges. Arrange in a bowl-placing them on the outsides.

4. Pour the orange curd into the bowl of peaches and place in the oven. Bake for 30 minutes.
