Papaya and Red Onion Salsa

Caribbean Sensation

1   Papaya
0.5   Red Onion
1   Jalapeno Chili
1 tbsp 15 ml   Cilantro, washed and torn
1 tbsp 15 ml   Lime Juice
0.5 tsp 2 ml   Salt
1. Cut the papaya in half and discard the seeds. Peel the papaya and dice the fruit flesh into small cubes. Likewise, finely dice onion and jalapeno. Place papaya, red onion and jalapeno pieces in a small bowl.

2. Wash and roughly tear the cilantro, and add to the salsa. Stir in a tablespoon of lime juice, along with a dash of salt. Stir to combine all ingredients.

3. Serve this fruit salsa with tortilla chips or pita triangles, or alternately with barbequed chicken or fish.
