Potato Hash

How do you like your Eggs?

2 tbsp 30 ml   Olive Oil
1 small   Onion, diced
2 cloves   Garlic, minced
1   Orange or Yellow Bell Pepper
3   Potatoes, diced
1 small   Zucchini, diced
1   Jalapeno, diced
1. In a heavy skillet heat the olive oil over medium heat. Stir in the diced onion and minced garlic, and stir occasionally as the brown. Add the diced bell pepper, zucchini, jalapeno and potatoes. Stir and add a dash of salt and pepper.

2. Reduce the heat to low and cover the pan and let cook for 15 to 20 minutes. Stir occasionally with a wooden spoon and slightly mush the potatoes together. If the mixture is slightly dry, add a tablespoon more oil and a 1/4 of a cup of water.

3. This is a good base for breakfast; melt some gouda or cheddar cheese on top. The only question now is, how do you like your eggs?
