Pumpkin Streusel Loaf


Spicy, Dense Deliciousness

Ingredients
0.333333 cup   walnuts, chopped
3 tbsp   brown sugar
1 tsp   cinnamon
0.5 tsp   ginger
3 tbsp   cold butter
0.25 cup   melted butter
2 cups   whole wheat flour
0.5 cup   sugar
1 tsp   baking soda
1 tsp   salt
0.5 tsp   cloves
0.5 tsp   nutmeg
1 cup   pumpkin puree
0.5 cup   plain, thick yoghurt
0.5 cup   honey
1 tsp   vanilla
2   eggs beaten
 
1. Combine walnuts, brown sugar, half the cinnamon and ginger. Cut in butter until mixture is crumbly. Set aside and preheat oven to 350°F.

2. Sift flour with sugar, baking soda, salt, the remaining cinnamon, cloves and nutmeg. Set aside. Whisk pumpkin with yoghurt, honey and melted butter, vanilla and beaten eggs. Make a well in the centre of dry ingredients with a wooden spoon and pour wet ingredients into it. Mix until just blended.

3. Scrape batter into a greased 9x5 loaf pan. Sprinkle with set aside topping. Bake for 1 hour or until tester comes out clean. Cool in pan for 15 minutes then turn out onto a rack.

Perfect for entertaining along side a nice pot of tea.
