Roasted Parsnips


A much underrated vegetable.

Ingredients
1 lb   parsnips
2 cloves   garlic, minced
1 tbsp   fresh ginger, minced
0.5 cup   maple syrup
2 tbsp   olive oil
  salt & pepper
 
1. Preheat oven to 400C. Peel and chop parsnips into rough hewn chunks. Place in a pot, cover with salted water and bring to a boil. Let boil about 5 to 10 minutes depending on thickness. Drain.

2. Scatter parsnips on a baking sheet with garlic and ginger. Drizzle oil and syrup overtop. Season with salt and pepper. Roast in oven for about 10 minutes until syrup has a wonderfully caramelly aroma and appearance.

3. These have an absolutely delicious blend of flavours and go perfectly with any sort of festive meal.

These can be tossed into the roasting pan with pretty much anything or done on their own as they don't take that long to cook.
