1. Wash red peppers and place on baking sheet. Grill under the broiler for about 20 minutes or until the skin is blackened and the peppers are aromatic.
2. Let peppers cool, then peel off skins. Combine with other ingredients in a blender. Season to taste, some like it garlicky some like it fetaey, add more or less depending on preference.
3. Delicous served with pita crisps or for those feeling more industrious, red pepper pita bread.
Roasted peppers and feta and garlic all serve to make this a sure fire hit!
