Roma Tomato Bruschetta

Simple Perfection

4   Roma Tomatoes
0.25 cup 60 ml   Basil, cilantro, or Italian parsley
1   white sweet Onion
1   Garlic clove
2 tbsp 30 ml   Olive Oil
0.25 cup 60 ml   Parmesan Cheese

1. Chop tomatoes and onion into small pieces. Tear the basil, or the cilantro or the parsley and stir in. Toss together in a bowl with minced garlic, olive oil and salt and pepper.

2. This is so simple and summery. Gently toast baguette rounds in the oven, and top with heaping spoonfuls of this bruschetta. And it is also excellent as a BBQ accompaniment to grilled steaks or any grilled white fish.
