Rosemary Orange Marinated Salmon

West Coast Zest

2 large   Salmon Fillets
0.5 cup 125 ml   Orange Juice, freshly squeezed
2 tbsp 30 ml   Honey
2 tbsp 30 ml   Olive Oil
1 tsp 5 ml   Orange Zest
1   Onion, diced
2 tbsp 30 ml   fresh Rosemary, roughly chopped
  Salt and pepper

1. Wash the orange, and then zest enough to make 1 (or more if desired) teaspoon. Cut the orange in half and juice into a baking dish. Mix the olive oil, and honey into the orange juice and zest. Chop the onion into small pieces and add to the dish.

2. Roughly tear the rosemary, and stir into the marinade. Lightly salt and pepper each side of the salmon steaks, and place into the marinade. Marinate the salmon for a couple hours in the fridge. Bake the salmon for 20 ish minutes, or until opaque and firm, at 350*F, or on a BBQ grill.
