Satayed Beef with Chunky Peanut Sauce

1. Mix the olive oil, minced garlic, soy sauce and ginger together and marinate the beef for 4-5 hours. 2. Skewer the beef onto soaked bamboo sticks. 3. For the peanut sauce, blend the peanut butter, onion, garlic, ginger, chilies, and coconut milk in a blender until it is a smooth (but not too too smooth) texture. 5. Cook the beef satays on a BBQ or in an oven heated to 400 F until desired, and serve with the peanut dipping sauce.
