Smokey Corn and Avocado Salsa


4   Corn Cobs
0.5   Diced Red Pepper
0.25 cup 60 ml   Diced Red Onion
2 tbsp 30 ml   Chopped Cilantro
1 tbsp 15 ml   Lime Juice
2   Chopped Avocados
1. Grill the corn on a greased grill over medium-high heat. Turn the cobs occasionally until they're grilled marked and tender (20 ish minutes). Take them off the grill and allow to cool.

2. Slice the corn off the cob and place in a medium sized bowl. Add in the diced red pepper, red onion, cilantro, and avocado. Mix thoroughly together, adding in a sprinkling of salt and fresh ground pepper.

3. Perfect to take to summer potluck parties!
