Spaghetti with Italian Meatballs

Spicy Meatball

0.5 lb   ground Italian sausage
0.5 cup   fresh parsley, chopped
2 cloves   garlic, minced
1   shallot, diced
1 tsp   salt
1 tsp   pepper
0.25 cup   fresh basil, chopped
1 can   crushed tomatoes
1   fresh tomato, chopped
2   shallots, diced
2 cloves   garlic, minced
2 dashes   salt and pepper
0.25 cup   fresh parsley, chopped
0.25 cup   fresh basil, chopped
0.5 cup   red wine
2 tbsp   olive oil
0.5 lb   spaghetti
1 tbsp   olive oil
1 tsp   salt
  Fresh Parmesan
1. To make meatballs combine the first 7 ingredients together until well mixed. Shape into small to medium sized balls about 2" thick at radius and place on a greaseproof baking sheet. Bake for about 20-25 minutes in a 350F preheated oven.

2. If you don't feel like making your own tomato sauce substitute a good quality jarred brand (Classico Red Pepper or Four Cheese are both good stuff), otherwise use this simple recipe.

3. Saute garlic and shallots in olive oil over medium high heat until fragrant. Add crushed tomatoes and fresh tomato and season with salt and pepper. Blend well. Cook until tomatoes are just tender at a simmering boil. Add parsley, basil and red wine, blend to incorporate. Season to taste and simmer for about 10 minutes.

4. Bring a large pot of salted water to a boil. Cook pasta until al dente; about 15-20 minutes. Add oil to pasta to prevent sticking.

5. Meanwhile once meatballs are done toss into sauce with pan scrapings and give it a stir. Once pasta is done toss through with sauce, salt, pepper and grate fresh Parmesan on top.
