Spank my pita

2 Lb 2 packets   Spinach (fresh or frozen)
0.5 cup 125 ml   melted Butter
10 sheets   Filo pastry
2 cups 500 ml   Feta cheese (and or Emmental/Gruyere)
3   Eggs
1 cup 250 ml   Cottage Cheese
1 tsp 5 ml   each, Salt and Pepper
1. Preheat oven to 375*F.

2. Grease a large baking sheet and lay 5 sheets of filo down brushing them liberally with butter.

3. Steam fresh or frozen spinach in a small sauce pan in a small amount of water. Drain the spinach and stir in feta cheese, cottage cheese, well beaten eggs, and spices.

4. Pour mixture onto buttered filo and place remaining 5 sheets (well buttered) on top.

5. Cover with foil and bake for half an hour, then remove foil and bake until golden
