Spicy Chicken and Chevre Wraps

A Devilish Combo

4   Tortillas
1   Chicken Breast, cooked and cooled
3   Green Onions
1   Celery Stalk
1 small   Green Pepper
1 tbsp 15 ml   Sweet Chili Sauce
1 tbsp 15 ml   Barbeque Sauce
0.5 cup 125 ml   Chevre, soft
1   Garlic cloves
1. Finely dice the cooked chicken breast (a great way to use a leftover piece of chicken) into cube size pieces and place in a small mixing bowl. Likewise, wash and dice the green onion, green pepper, and celery and mix in with the chicken. Mince the garlic and add into the chicken mixture along with the sweet chili sauce and the BBQ sauce. Stir to combine.

2. Lay the tortillas out on a dry counter and smear a spoonful of chevre onto each one. Top the goat cheese with heaping spoonfuls of the spicy chicken salad. Once all the chicken is doled out, roll up the wraps into a tight tortilla bundle.

3. At this point, you can either fry the wraps over medium heat in a frying pan with a little oil until golden, or just eat cold and wonderful as is. Either way this makes a delightful little lunch.
