Spring Salad

Nice, light, gourmet...

1 head   Lettuce, or mixed greens
0.25 cup 60 ml   Pine Nuts
1   Avocado, sliced
0.5 cup 125 ml   Strawberries, sliced
6 tbsp 90 ml   Olive Oil
3 tbsp 45 ml   Red Wine Vinegar
3 tbsp 45 ml   Maple Syrup
0.5 tsp 2 ml   Dijon Mustard
1 clove   Garlic, minced
  Salt and Pepper
1. Wash lettuce. Tear into smaller pieces. Slice Avocado and Strawberries and add to bowl with lettuce.

2. Pre-heat oven to 375*F. Place pine nuts on a baking sheet and drizzle with olive oil. Bake for 5-10 minutes or until golden, shaking occasionally. Add to salad.

3. Whisk olive oil, red wine vinegar, maple syrup, mustard, garlic and dashes of salt and pepper together in a small container until all incorporated.

4. Lightly dress salad, toss and serve.
