Stuffed Pepper Bites

Baby's got bite.

10   Sweet mini Peppers
0.5 cup 125 ml   Monteray Jack Cheese, grated
1   Tomato, chopped finely
0.5   Small Onion, diced
0.25 cup 60 ml   Cilantro, chopped
0.5 tsp 2 ml   Chili Powder
0.5 tsp 2 ml   each, Salt and Pepper
1. Wash and halve the mini peppers and remove all seeds and stems. Set the peppers aside. Finely dice the tomato, onion and cilantro and mix together with the spices in a small bowl. Grate the monteray jack cheese.

2. On a baking sheet, lay the pepper halves out evenly. Spoon the tomato mixture into each open shell and top with a sprinkling of cheese.

3. Bake in a 350*F oven for about 15 to 20 minutes, until the pepper skin is browning and softening and the cheese if fully melted.
